Chipotle Chicken and Veggie Foil Packs

This is an easy recipe that you can cook on the grill or a campfire.  Use any veggies you have on hand!  I personally like the steam-in-bag veggie medleys that are pre-washed.  There is literally nothing to do other than season it and wrap with foil!  I like to use Mrs. Dash seasoning blends because they don’t contain salt.  I do add my own salt but I can control how much I use as I think most packaged seasonings contain way too much.

 

 

Chipotle Chicken and Veggie Foil Packs

Ingredients

  • 1 lb of chicken breasts
  • 6-8 baby red potatoes, washed
  • 1 12oz package baby carrots, broccoli, cauliflower Medley
  • 2 tbsp butter
  • 1 tsp Mrs Dash Southwest Chipotle
  • 1/8 tsp garlic powder
  • Salt (to taste)
  • Pepper (to taste)

Instructions

Heat your grill or campfire.

While the grill heats, tear 3 pieces of foil enough to completely wrap the chicken, the potatoes, and the veggies into separate foil envelopes. Dice the chicken into 1 inch cubes. Place chicken into foil #1 and season with Ms Dash Southwest seasons and salt. Wrap the foil into an envelope. Cut the potatoes in half. Place into foil #2 with 1 tbsp butter and season with garlic powder, salt, and pepper. Wrap the foil into an envelope. Add veggie medley to foil #3 with 1 tbsp butter and season with salt and pepper. Wrap the foil into an envelope.

Place the potatoes and veggies on the grill or directly on the campfire. Cook 10 minutes and flip the foil packets over. Add the chicken packet. Cook 6 minutes and then flip. Cook another 6 minutes or until fully cooked.

Remove all the foil packets from the fire and let cool. Unwrap and serve!
